Highlighting water fraud in imported frozen fish fillets

Context

The fraudulent addition of water in aquatic products and the use of illegal or undeclared additives, which ensure the retention of this water in the products, constitute increasingly significant unfair competition on the French market and deception for consumers. This fraud concerns in particular imported fish, which are among the most widely consumed products in France. There are currently no criteria or methods to detect these unfair practices of adding water, particularly to fish fillets. Moreover, there is not yet an analytical method for the determination of the unauthorized additives used.

About the project

The objective of the proposed study is to establish analytical criteria to detect this type of fraud, in the fillets of the main imported fish species. The tools developed constitute an indispensable aid to companies and control bodies in the fight against fraud present on the French market.
