All the qualitative studies carried out over the last few years on the perception of aquatic products show a positive but contrasting image. Two dominant features stand out: the strength of the marine symbolism and the health benefits resulting from the consumption of aquatic products. But very quickly, however, obstacles to consumption are mentioned in the discussion groups. For the majority of respondents, the question of bones was raised.
